Light Maple & Pumpkin Spice Latte

Mmmm, I am a huge fan of specialty coffee drinks. Although I generally prefer iced coffee drinks, I enjoy this one just as much when it’s hot.

My list of ingredients is approximate. I honestly just added pumpkin and half & half until it tasted how I wanted. :P Also note that I used maple syrup in place of sugar. You can use as much or as little as you like, depending on how sweet you like your coffee.

To make 1-2 servings (depending on how caffeinated you want to be), you will need:

  • 3/4c brewed espresso or very strong coffee
  • 1.5 cups low-fat milk or fat-free half & half
  • 1/4c pumpkin puree
  • 2 tbs maple syrup (more or less to taste)
  • 1/4 tsp pumpkin pie spice (Yeah, I took the lazy route)
  • (Optional) Sweetened whipped cream

Start by brewing your espresso or coffee. The espresso I used is from Target, in case you have had trouble finding it.

Mmmm. Freshly brewed coffee smells so good!

In a small saucepan, combine all of the ingredients (except for the whipped cream, obviously. :P ). Heat over medium and stir constantly until the pumpkin puree is incorporated and heated through to the desired temperature.

If you want an iced latte, just let this mixture cool and chill it in the fridge for about an hour. Serve over ice. Either way, top with whipped cream. :P

Maple syrup also from Target, because I happened to be there. Pumpkin Puree can 1 of 10 down; 9 to go. :P

I seriously think I’m going to make myself another one of these right now. >.>
