Ingredients
- 2 slices whole-grain bread
- 1/2 of a medium to large tomato
- 1 garlic clove
- 2 tsp olive oil
- 1/2 tsp balsamic vinegar
- 2 tsp fresh chopped basil
- salt and black pepper
- (optional) a few crumbles of feta cheese
Instructions

First, pre-heat your oven to 425°F. Bake the slices of bread on a baking sheet for 6 minutes, or until toasted.
- After toasting the bread, slice the garlic clove in half and rub the sliced side against the top side of each bread slice.
- Drizzle each slice of toast with approximately 1/2 tsp olive oil.
- Dice the tomato into small cubes and place into a small bowl.
Finely chop the basil and place into the bowl with tomatoes.
Add in the balsamic vinegar and remaining olive oil. Toss to combine.
- Spread the tomato mixture over the toast.
Season with a little salt and ground black pepper. Enjoy!
