Ingredients
- 1 pita bread “crust”
- 1 garlic clove
- 1 tsp olive oil
- 2 tbs ricotta cheese
- salt & pepper to taste
- 3-4 sliced button mushrooms
- 4-5 cherry tomatoes, halved
- small handful of spinach leaves
- 1/4c mozzarella cheese
Instructions
- Start by preheating your oven to 400.
- Peel your garlic clove and slice it in half. Rub it all over the pita bread to release the oil and give it a slight garlic flavor.
- Drizzle the crust with olive oil, and spread with ricotta cheese. Season the ricotta with a light sprinkling of salt and pepper.
- Add the sliced mushrooms and halved tomatoes. Sprinkle with shredded mozzarella cheese, and add the spinach leaves on top.
- Bake at 400 for around 8 minutes, or until the cheese has melted.
