Chocolate-Pistachio Apricots

  1. Before you get started, line a baking sheet with wax paper.
  2. Finely chop the nuts in a food chopper, processor, or blender.
  3. Melt the chocolate in a small dish according to package instructions.
  4. Dip each apricot halfway into the chocolate, and let any excess drop off. Then, dip into the chopped pistachios.
  5. Place on the wax paper-lined baking sheet. Once you are finished, pop the baking sheet into the refrigerator for 15 minutes to harden the chocolate quickly.

Make-ahead note: You can store these in an air-tight container for about a week
