Chocolate Mint Chip Cookies

Servings: 10-12 cookies



  1. Begin by preheating the oven to 350 degrees F. Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, mix the sugars and butter with an electric mixer on medium for about 3 minutes, until thoroughly combined. Add in the milk, egg and vanilla, and mix on low for an additional minute.
  3. In a separate medium bowl, whisk together the cocoa powder, flour, baking soda, baking powder, and salt.
  4. With the mixer on low, add the dry mixture to the wet mixture; mix until combined. Add the mint chips and mix until just combined.
  5. Using a cookie scoop or rounded tablespoons, spoon the cookies out onto the prepared baking sheet, leaving 1.5 inches between cookies.
  6. Bake for 7-9 minutes, or until the edges of the cookie are firm and the center is set. Let the cookies cool for about an hour (if you can stand it). After the cookies have cooled, they will be firmer and easier to handle.
