Chocolate-Covered Cherry Cookies

  1. For the cookies: Begin by preheating the oven to 350 degrees F and getting two baking sheets ready. Line them with parchment paper if you wish to make cleanup easier.
  2. Cream the butter and sugar together. Mix it well, preferably with an electric mixer. Add the salt, egg, and vanilla. Beat well.
  3. In a separate bowl, whisk together the dry ingredients. Slowly add the dry ingredients to the butter mixture; mix until smooth. It should be pretty thick (sorry that I don’t have a photo of that step to share with you). The dough should be thick enough to hold its shape when rolled into a ball.
  4. Roll the dough into roughly one-inch balls. Place on the cookie sheet. Using your thumb (or the end of a thick-handled utensil if you don’t want to get your hands dirty again), make a small cherry-sized indentation in each ball of dough. Place a cherry in each indentation.
  5. Bake for 10 minutes. Remove from the oven and let cool before making the frosting.
  6. For the frosting: Using a double boiler, heat up the cherry juice and sweetened condensed milk to lukewarm. Add the chocolate chips and continue heating gently until the chips have melted and the frosting is smooth. Frost each cookie using a knife or offset spatula so that the cherry is covered.
  7. Let the icing harden before serving.
