Post 6 of 12 in my 12 Days of Christmas Recipes Series – Goat Cheese-Stuffed Dates Wrapped with Prosciutto
This is a great little appetizer to have in your arsenal with the holidays coming up. These dates are first stuffed with goat cheese and then wrapped in prosciutto and secured with a toothpick. The combination of sweet and salty is divine! You can make these a day in advance and keep them refrigerated.
To make 12-16 appetizer servings, you will need:
- 8 ounces of whole dried, pitted dates
- 4 ounces of goat cheese, softened slightly
- 3 ounces of prosciutto, sliced thin and cut into approximately 1″ x 3″ strips
First, you want to make sure the dates you have are decent-sized and not too beaten up from the mechanized pitting process. For this reason, I bought two different kinds and found that the above brand worked out the best.
Next, with a sharp knife, slice open one side of the date and stuff it with approx 1/2 tsp of the goat cheese.
Wrap it up with a strip of the prosciutto, and pin with a toothpick. Store refrigerated and covered for up to a day.
