This decadent snack is so easy to make that I almost feel dirty making an entire post about it. But I would feel worse if I didn’t share it with you.
These chocolate-pistachio apricots are a great snack that you can make ahead to serve at parties or give as gifts. I gave them out last Christmas in gift baskets, and snacked on the leftovers through New Year’s. And they are much better for you than most holiday baked goods, so you don’t have to feel guilty about eating them. Apricots are actually very high in fiber and beta carotene, and pistachios contain antioxidants and heart-healthy fats. And, well, a little semi-sweet chocolate never hurt anyone.
To make approx 10 snack-size servings, you will need:
- 12 ounces of dried apricots
- 6 ounces of semi-sweet chocolate
- 4 ounces of shelled pistachios
Before you get started, line a baking sheet with wax paper.
Finely chop the nuts in a food chopper, processor, or blender.
I just happened to see this package of dipping chocolate in the grocery store when I was doing my party food shopping, and thought it would be the perfect size for these apricots without having to dirty another dish. I made so much food that I needed all the help I could get with cleanup. It worked out great – I used the couple of ounces that were left over in my cake pops later that day.
Anyway, melt the chocolate (in a small dish, if you aren’t using a disposable container) according to package instructions.
Dip each apricot halfway into the chocolate, and let any excess drop off. Then, dip into the chopped pistachios.
Place on the wax paper-lined baking sheet. Once you are finished, pop the baking sheet into the refrigerator for 15 minutes to harden the chocolate quickly.
You can store these in an air-tight container for about a week. Enjoy!
